I did my shopping early this week in order to be prepared for the snow that is supposed to come our way today. The colder weather makes me crave heavy comfort foods, so that's what's on my menu this week.
Breakfasts:
Oatmeal, waffles, scrambled eggs, cold cereal
Lunch:
Buffalo Chicken sandwiches, grilled cheese, chicken noodle soup, left-over pasta fagioli
Dinners:
Beef Burritos made with my Mexican Shredded Beef
White Chicken Chili
Chicken Enchiladas
Chicken and Dumplings
Ham and Noodle Casserole
Shepard's Pie
Desserts:
Left over Cheese Cake
Oatmeal Cookies (see recipe below)
Ingredients
- 3 eggs, beaten
- 1 cup raisins
- 1 teaspoon vanilla extract
- 1 cup butter
- 1 cup packed brown sugar
- 1 cup white sugar
- 2 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 2 teaspoons baking soda
- 2 cups rolled oats
- 1 cup chopped pecans
Directions
Preheat oven to 350 degrees FIn a large bowl, cream the butter, eggs, brown sugar, vanilla and white sugar together. Sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the raisins, rolled oats, and nuts.
Drop by teaspoonfuls onto an unprepared cookie sheet. Bake for 10 minutes, or until lightly browned.
