Mexican Chicken Soup

Yum
My neighbor made this recipe for a recent potluck. I wish I had thought to get a picture of it, but I was too busy gobbling it down.  Thankfully, she did share the recipe.  It's super easy to make and can be customized to either increase or decrease the spiciness.

Sautee one chopped onion, then in a big pot or crock pot mix:
 4-6 cups chicken broth
1 shredded rotisserie chicken
2 cans mild-medium rotel tomatoes
2 cans fiesta corn
2 cans black beans
1 package ranch dressing,
1 package taco seasoning.

Cook on high for a couple of hours until it's thoroughly heated.

You can top with sour cream, mexican cheese, and/or avocado.  Up the heat by using spicier rotel tomatoes or taco seasoning.

So yummy!
