Banana Pudding Recipe and Menu Plan Monday 4/25/2011

I hope everyone had a great weekend.  We've got another busy week planned around here.  I'm starting back to school next week, so I have a lot of things to get done in order to get ready and make things easier on my DH and kids.  Here is my meal plan for the week:

Left over ham, potato salad and Banana Pudding.
Spaghetti and meatballs, salad, garlic bread
Ham and Cheese Quiche, fruit salad
Ham and noodles
Chicken pot pie, fruit salad
Hamburgers, mac and cheese
Baked Chicken, brocolli

Yum.  Just hand me a big spoon...


Easy Banana Pudding

1 small box instant vanilla pudding
1 small box instant banana pudding
3 cups cold milk
1 cup sour cream
1/2 tub cool whip
1 box Nilla wafers
4-6 ripe bananas, sliced. Divided in 2 parts.

In mixing bowl, mix pudding and milk.  Mix in sour cream, set aside and let set for about 5 minutes. 

In 9x13 pan, place a layer of cookies to line bottom.  Top with  on half of the slices of banana.

When pudding has soft set, gently fold in Cool Whip.  Spoon mix over cookies and banana slices.  Top with remaining banana slices.  Crush a few more cookies over the top.

Chill pudding in fridge for at least an hour before serving.

I have made this recipe for banana pudding for many years. I have also made it with the sugar free and fat free products and it is just as delicious. It is a family favorite.
